Apple and Cream Cheese French Toast with Strawberry Coulis
There was this programme on an Indian TV channel called “Do It Sweet”; it was hosted by a very talented modern chef, the head of the Aurus restaurant in Mumbai and just a very fascinating man Vicky Ratnani. As the name of the show suggests, he was making desserts – beautiful, stunning, yet easy to reproduce at home. Vicky was assisted by fabulous Maria Goretti who, to my mind, with her outstanding appearance resembled Monica Bellucci. Maria used to act more like “a commentator” rather than “a serious helper” in the kitchen (but the Chef didn’t need that much help, anyway) – every time she came up with amazing facts about the ingredients Vicky cooked with. So, the audience learnt about the nutritious value of pistachios, about the benefits of consuming prunes and about the “good fat” and antioxidants in chocolate. And, since Vicky cooked a lot with apples (just think of the fiber content in them!) Maria couldn’t stop praising the fruits. One of the recipes with this wonderful ingredient that got my attention was apple and cream cheese filled French toast. On the one hand, it’s just a stuffed French toast. On the other hand, because of the complexity of flavours in the filling and due to the presentation it is a restaurant type of a dish. I enjoy cooking (and consuming!) it when strawberries are in season: during the winters spent in Kolkata and summer vocations in Moscow. Oh yes, it’s another advantage of having two homes in different parts of the world!
Recipe adapted from “Do It Sweet” TV show (Chef Vicky Ratnani)
Ingredients:
Filling
1 large red apples, peeled
15 gm butter
20 ml lemon juice
20 ml orange juice
50 gm cream cheese
2 tbsp raisins, soaked in Cointreau
1 tbsp orange zest
pinch of cinnamon
French toast
6 slices of bread
2 eggs
100 ml milk
1 tsp cinnamon powder
25 gm butter
Strawberry coulis
200 gm strawberries, hulled
2 tbsp icing sugar
Method:
For the filling, chop the apple and sauté it in butter, lemon and orange juices till soft. Strain the liquid. Add cream cheese, raisins, cinnamon and orange zest to the apples.
For the French toast, cut the rounds out of the bread. Divide the filling between the 3 rounds and top it with the remaining ones. Whisk eggs with milk and cinnamon, pour the mixture into a deep plate and leave the stuffed rounds of bread in it for 10 minutes, turning once, or until the mixture is absorbed. Heat butter in a pan and fry the toasts till golden brown on both sides.
For strawberry coulis, reserve a few strawberries and puree the rest of them in a blender with the icing sugar. Strain through a fine sieve.
To serve, make a pool of strawberry coulis on a plate. Put the French toast on top of it, garnish with the reserved strawberries and mint leaves.
Note:
1. Strawberry coulis can be made in advance – it keeps well in an airtight container for a few days in the fridge.
2. It’s better to make the filling long before stuffing the toast – cream cheese melts when it hits the hot apples and the whole mixture becomes a bit gooey. After being left in the fridge for a while, it thickens and it’s easier to spread it on the slices of bread.

Hyderabadi food blogger Hari Chandana shares her recipes for peppered pulihora, fried semolina cakes, deep fried sweet dumplings and pumkin halwa.
Miriyam Pulihora
Ingredients:
1 cup raw rice
2 cups water
Big lemon sized ball of tamarind
2 - 3 green chillies
4 dried red chillies
1 tsp black peppercorns
1 tsp mustard seeds
1 tbsp chana dal
1 tbsp urad dal
3 tbsp peanuts
1 tsp jaggery, powdered
1/2 tsp turmeric powder
A pinch of hing
2 sprigs of curry leaves
3 tbsp oil
Salt to taste
Method:
Wash and pressure-cook the rice with two cups of water for 3-4 whistles. Soak the tamarind in water for 10 minutes. Squeeze the extract out of it and set aside. Dry roast the black pepper for a couple of minutes and cool. Grind into a powder and set aside. Spread the cooked rice on a wide plate and let it cool completely. Now, heat oil in a pan and add the mustard seeds, chana dal, urad dal and peanuts, letting them splutter. Fry them until golden brown and add the slit green chillies, red chillies, hing and curry leaves to it and fry for a couple of seconds. Now add the tamarind extract, jaggery, turmeric powder and powdered black pepper to it and mix well. Cook the mixture until the oil separates. Turn off the flame. Mix rice, salt and cooked tamarind and serve.
Pesara Poornam Boorelu
Ingredients:
1/2 cup urad dal
1 cup rice
3/4 cup moong dal:
3/4 cup freshly grated coconut
1 and 1/2 cups powdered jaggery
1/2 tsp cardamom powder
1/2 tsp salt
Oil for deep frying
Method:
Wash and soak the urad dal and rice overnight or for 6 hours. Wash and soak the moong dal in water for 2-3 hours. Drain the water from urad dal and grind to a smooth paste adding little water (approx. 3/4 cup of water). The thickness should be similar to a dosa batter. Add salt to the urad dal batter and set aside. Now drain the water from moong dal and grind into a smooth paste adding very little water. Pour the moong dal batter into greased idli plates and steam cook for 12-15 minutes. Switch off the heat and allow it to cool.
Chop and grind the pieces and set aside. In a heavy bottomed vessel, mix the powdered jaggery and water. The amount of water should be just enough to soak the jaggery and allow the jaggery to melt. When boiling bubbles appear, add the moong dal mixture and grated coconut and mix well. Cook on a medium flame till it forms a thick mixture. When it thickens, add the cardamom powder and mix well. Allow it to cool and roll into a round shape balls. Heat enough oil in a frying pan. Then dip each moong dal ball in the urad dal batter and let it coat evenly. Then gently drop them into the hot oil. Deep fry them till golden brown and serve hot.
Gummadikaya Halwa (Pumpkin Halwa)
Ingredients :
2 cups grated pumpkin
2 cups milk
1 cup sugar
3 tbsp melted ghee
10-15 almonds
1/2 tsp cardamom powder
Method:
Heat the ghee in a wide and heavy bottomed pan. Add and fry the chopped almonds until light golden and set aside. In the same pan, add the grated pumpkin and fry well, till the raw smell disappears. Add milk and stir it well. Cook the mixture till the milk evaporates and then add sugar. Allow the sugar to melt and cook the mixture till the ghee separates from the halwa. When the halwa leaves the side of the pan, turn off the flame. Add the cardamom powder and roasted almonds before serving.
