Indian desserts are very tempting and mouth watering. Be it a scorching summer or a bone clattering winter indian mithai is always too difficult to resist. A sweet sign-off to a main meal, dessert is one of life’s great pleasures. Layered trifles and towering profiteroles bring real glamour to your dinner party. Sometimes the simplest desserts can be the most impressive - a buttery tarte tatin lets the apples do the talking. Of course desserts don’t have to be hugely calorific, recipes for baked apples, poached pears and tangy fruit tarts mean that a commitment to eating healthily is not sabotaged by your pud.
Diwali is the best time to enjoy all those few-times-a-year sweets and snacks and this year has been the year of quick and easy sweets recipes for me. Just because you are busy or working or traveling doesn't meant you can't make any sweets at home for the festive season - we just need to get a bit creative about it and not be too finicky that the sweets be 'traditional' and 'authentic'. If you can make a great-tasting sweet or two under 20 mins for Diwali, why not right?
The two biggest time-savers, in my experience, have been:
(a) Condensed milk - needless to say, condensed milk works really well as a base for Indian sweets. Since a lot of our sweets start with thickening milk, this really speeds up the job. The only downside is that it's often hard to regulate the amount of sugar. I made 10-min palkova last week and it was really too sweet, even for me. Don't get me wrong, it was delicious, but I had to add a handful of chopped nuts to cut the sweetness levels. This is just a minor inconvenience compared to the lusciousness condensed milk can bring to Indian sweets though.
(b) Readymade powdered cardamom - this may not be so obvious, but we use cardamom to flavour almost all our sweets and powdering it takes more time than we realise. Buying powdered cardamom is more expensive but the amount of time it saves, especially when you are making lots of sweets (or more than one!), it's definitely worth it. Also, the texture is more uniform than when we pound one or two cardamom pods in a pestle and mortar. I don't like biting into cardamom bits so this is perfect for people like me. Buy the smallest packet you can find and you will be amazed at the convenience it offers.

Doodh Peda is an easy Indian sweet recipe made with condensed milk and milk powder and flavored with cardamom and pistachios. The tradional recipe requries you to condense the milk at home, but this recipe of Doodh Peda makes the process easier by using the ready condensed milk.
Lets dive right in to see how to make the delicious Doodh Peda Recipe.
Ingredients
1-1/2 cups of milk powder
400 grams Condensed milk
1/2 teaspoon of cardamom powder
1/4 cup butter or ghee, melted
A few sliced pistachios
Method
Into a heavy bottomed pan; Combine the together the condensed milk, milk powder and butter. Stir the milk powder into the condensed milk.
Place the pan on medium heat and stir continuously until it becomes a thick batter. The process will be a little hard, as the mixture will thicken up quickly. We need to get an oily texture to the dough as we mix, such that it comes away from the sides of the pan.
Once it becomes thick and leaves the sides of the pan, add in the cardamom powder and stir to combine well. Turn off the heat and transfer the peda dough to another bowl and allow it to cool completely.
Once cooled, knead the peda dough until smooth and fluffy. Divide the dough into small lemon sized balls. Make an impression with the thumb in the center and place a piece of pistachio in the center.
Serve the delicious Doodh Pedas as a snack or make them during festivals like Diwali.
