Jalebi is a traditional sweet dish that no occasion can do without. This homemade Jalebi recipe is actually very easy to prepare and tastes absolutely delicious. Festivals like Diwali are incomplete without the preparation of this sweet dish.

So lets dive right in to see how to make the homemade Jalebi recipe right in your own kitchen. 

Ingredients

1 cup maida or all-purpose flour

2 tablespoon corn flour

3/4 cup thick sour curd

1/4 teaspoon baking soda

2 tablespoon ghee

Pinch of yellow food colour

2 tablespoons oil, for deep frying

Ingredients for the sugar syrup

1 cup sugar

1 cup water

2 teaspoon cardamom powder

Method

Begin preparation by mixing the maida, corn flour, baking soda, ghee and yellow food colour in a medium bowl. Add curd to the dry ingredients and blend them all together to make a thick batter by adding a little water. The consistency of the batter should be thick and not watery, similar to the vada batter.

When done, keep the batter in a warm place for 24 hours or overnight, till it is fermented (the batter will rise on fermentation). After this period, mix the batter with a ladle.

To make the sugar syrup, boil the sugar with water and cardamom powder in a small bowl on medium heat until the sugar dissolves. When the sugar becomes thick and stringy of one string consistency.Turn off the heat and keep aside.

Now to make the jalebis, preheat the oil for deep frying. Pour the batter into a disposable piping bag with a tiny hole made in the middle or into a durable ziploc bag with a hole and squeeze out the batter in small circles into the hot oil.

Make 3-4 concentric circles for each jalebi and end the circle by overlapping the tip to get the desired shape.

Deep-fry the jalebi on both sides in the hot oil (not boiling hot) till they are evenly crisp. Once done, drain them off the oil and immediately put them into the hot sugar syrup.

The Jalebis should rest in the sugar syrup for at least 2 minutes, after which they can be drained out of the excess syrup and then served.

Note:

Ensure the batter is thick and firm, or else they won’t retain the shape of the jalebis. The oil for frying should be medium hot. If it is too hot, the jalebis will end up burnt.

Black Currant Dates Kheer or Payasam is a nutritious sweet pudding, made by mixing dates, currants and dry fruits in coconut milk. The kheer is rich in Iron, Magnesium and the B-Complex Vitamins, making this pudding a tasty and filling dessert option especially during parties or family occasions. Dates Kheer is usually prepared by grinding dates, and adding the sugar and coconut milk. In this recipe, we have chopped the dates for that added texture.

Lets dive right in and see how to make Black Currant Dates Kheer Recipe

Ingredients

1/2 cup seedless dates, chopped finely

1/2 cup black currant (dry)

1/4 cup poppy seeds

3/4 cup jaggery powder

2 teaspoons ghee

1/2 cup dry fruits

300 ml of coconut milk

2 teaspoons rice flour

Method

To start with, roast the dry fruits, poppy seeds, dates and black currant with ghee in a small pan on medium heat, till a wonderful aroma emanates. With heat on low, add in the jaggery and coconut milk to the dry contents and mix everything together. 

Mix the rice flour in a little water separately and add it to the above mixture, and stir to combine well.  Bring all the ingredients to a boil, simmering them until slightly thickened for 5 to 10 minutes. 

The Black Currant Dates Kheer is now ready to be served hot or can even be refrigerates and had chilled. 

Note:

Replacing the black currant with dry grapes, jaggery with sugar, coconut milk with regular milk and rice flour by corn flour will also suffice. There may be a slight change in the taste while using these.
To increase the thickness of the kheer, add more rice flour diluted in water if necessary.
