The best way to enjoy the sweet flavours and crunchy texture is to tuck into a whole corn on the sob smothered with butter and herbs. Or for an added kick try it with chillies, grated cheese and a squeeze of lime.

The Spinach and Corn Quesadillas recipe is a twist to the classic Mexican dish that are made with pan toasted tortillas filled with cheese and a variety of the other fillings. In this recipe i am going to show you how to make them using whole wheat flour tortillas filled with spinach and corn.

Quesadilla is a dish in Mexican cuisine or Tex-Mex. Exactly what constitutes a quesadilla varies from region to region and between the U.S. and Mexico, and is not universally agreed upon, but there are certain similarities between the different versions that people generally agree upon, namely that the quesadilla is cooked after being filled or stuffed. "Queso" is cheese in Spanish. And a quesadilla is a toasted tortilla with melted cheese inside.

Serve with the lettuce, salsa, sour cream, and guacamole.

Ingredients

6 Homemade Whole Wheat Flour Tortilla Recipe
1 cup grated cheese; either Monterey Jack or sharp cheddar cheese
100 grams of sweet corn, steamed
500 grams of spinach, finely chopped
Butter/oil for toasting the tortillas
Salt and pepper to taste
Method

Heat oil in a pan and saute the spinach until cooked and the moisture is vapourized. Stir in the salt and pepper to taste and allow the spinach to cook. 

Once the spinach is cooled, add in the steamed corn and stir.

Place the tortillas on a flat surface and place the spinach corn filling in the center. Spinkle some cheese and fold the tortillas into have and press it down.

Spread softened melted butter over the top part of the tortillas. Place the tortillas on the heated pan with the buttered side down. You could optionally put more butter on the other side. 

Press down on the tortilla for a few seconds, allowing the cheese to melt inside.

Flip the quesadilla to toast on the other side, until golden spots appear and the tortillas are lightly crisp. 

Serve with Spinach and Corn Quesadillas with lettuce, salsa, sour cream, and guacamole.
Alternative Cooking Option in an Oven

Heat oven to 350 F. Follow the same steps as above from filling to folding. Place in a cookie sheet and bake in oven long enough for cheese to melt, about eight to 10 minutes, but do not dry out tortillas.

Remove the Spinach and Corn Quesadillas from oven.

Slice the quesadillas into thirds (about 3 pieces for each tortilla). Serve the pinach and Corn Quesadillas hot along with lettuce, salsa, sour cream, and guacamole.
Note

The filling for the quesadillas can be anything of your choice: olives and and salad vegetables. Experimenting can get fun and tasty with this dish. Cheese can be omitted if desired and it will taste just as great.
Sweet corn is much loved in our home and in all forms especially charcoal roasted corn on the cob (butta) with a mixture of salt, chili powder and lemon juice sprinkled over it. Nehal is fond of creamy corn with pasta or corn fritters while Satish and I like to relish it in the form of a curry with roti or flavored rice. With a lot of fresh corn cobs sitting in my fridge, thanks to a dear friend, I went on a sweet corn binge for a couple days. Made bread pizza with sweet corn, steamed corn cobs, vegetable au gratin with corn being a star player, corn vadas with lots of coriander and sweet corn curry to go with peas pulao.
