Appam is a Kerala dish made with fermented rice batter and served along with sweetened coconut milk or stew. It is appam is prepared in an appa kal (mould that is a bowl shape).It is delicately flavoured with coconut and in the shape of a bowl with a thick centre and hole frilled edges. Serve the Kerala Appams along with Kadala Curry or Kerala Style Vegetable Stew.
Ingredients
2 cups raw rice, soaked 3 hours (like ponni raw rice)
1 cup cooked rice
1 cup freshly grated coconut
1 teaspoon yeast + 1/2 cup of luke warm water
2 tablespoons sugar
salt to taste
Method
Combine the salt, a tablespoons of sugar and yeast in the warm water and allow it to proof for 5 minutes. I used an instant dry yeast, a variety that does not need proofing, hence most often add it directly to the batter.
Grind the soaked rice, cooked rice and coconut, adding just a little water and salt to make a thick batter. Add in the proofed yeast to the batter and stir well to combine. Transfer the appam batter to a bowl. Cover the bowl and allow it to ferment for 5 to 6 hours or overnight.
Adjust the consistency of the fermented appam batter, adding water a little at a time to make it of thick pouring consistency.
The water added is to make a smooth batter of pouring consistency (the same as you would do for a pancake). If you make it too watery, then the appams will not be as soft and will not spread well.
Preheat the appachetti or the appam pan on medium high heat. Pour a ladle of batter on the appachetti and swirl the pan in circular fashion to spread the batter.
The batter will be thick in the center and thin on the sides. Cover the pan with a lid for approximately 2 minutes until it is crisped and golden brown on the sides and the centre is steamed and cooked.
Serve the Kerala Appams along with Kadala Curry or Kerala Style Vegetable Stew.
'Madakasan' as is popularly known in Kerala, are super thin crepes filled with a lovely coconut mixture. It is an excellent snack to serve your kids at home when they are super hungry or simply bored! Though this is usually eaten as a snack, it also qualifies as a super quick and delicious breakfast option.
Ingredients for Pancake
1 and 1/2 cups All purpose flour (Maida)
1 and 1/2 cups milk
1 egg beaten
2 tablespoon sugar (refer notes)
salt to taste
Ingredients for Filling
2 cups grated fresh coconut
3 Cardamom pods; crushed
2 tablespoons ghee
6 tablespoon sugar
Method For the Pancakes
Mix together all purpose flour, eggs, salt, sugar and water and make a thin batter. Heat a non-stick pan/thava and pour the batter and spread it. Cook for a few minutes on one side and then flip over. Prepare pancakes like this with the remaining batter.
For the Filling
Heat ghee in a pan and add coconut, crushed cardamom and sugar and mix well. Cook till the mixture becomes soft and juicy (till all the sugar melts; this will take a few minutes).
Place the filling in the pancakes and roll it.
Serve hot/warm with honey or just as it is.
Notes
1. You can replace sugar with powdered jaggery. Adjust the quantity according to your tolerance for sweetness.

Who can resist a dessert pancake? Easy to make, and easy to cook, once you have made the batter earlier and left it to rest.
Serves 6
Ingredients
125g (4 and 1/2 ozs) flour
2 tablespoons of caster sugar
2 whole eggs
120 ml (4 fluid oz) milk mixed with 65 ml (2 fluid oz) single cream
30g (1 oz) butter, melted and cooled
Directions
1. Sift the flour into a bowl. If you don't want to sift it, whisk it gently or use a fork to add air to it.
2. Make a well in the centre of the flour and add a third of the milk/cream. Break the eggs into the well and whisk. Now slowly pour the rest of the milk/cream into the flour mixture, whisking each time until it is incorporated before you add more. Keep going until you have no milk/cream left.
3. Add the melted butter and sugar and whisk until there are no lumps.
4. Leave the batter to rest for half an hour so that it thickens.
5. Brush a cast-iron or non-stick pan with melted butter (or heat a bit of butter in the pan and wipe off the excess with a paper towel. Keep the paper towel, you can use it to oil the pan for the second pancake).
6. When the pan is hot, pour in a couple of tablespoons of batter, or ladle it in.
7. Swirl it round the pan, then cook the pancake until the edges seize up and lift, turn the pancake, and cook the other side for about 30 seconds.
8. Use the paper towel to re-grease the pan for the second one. Keep going, keeping the pancakes warm in the oven, and covered in tin-foil.
Cook's note
– If you are doing a good few, use two pans at the same time.
– If you add the batter to the pan, off the heat, you don't need to use more butter to oil it.
