Christmas provides a striking example of how this generation of women created new baking traditions. This was the one time of year that my mother, and other women in our extended family and neighbourhood, allowed the scale of economy and abundance they so carefully managed to tip in favour of excess. Foods were exceptional in that they were of a higher register than the baking we usually had in the house. Mom used more expensive ingredients, like dried fruit and nuts; it was the one time that she baked with butter, and everything was made with white sugar. The variety was truly staggering. Delicate shortbread cookies, each decorated with a dot of icing and a piece of cherry; gingerbread men with raisin eyes; sugar cookies cut out in Christmas shapes with dobs of bright icing slopped on by children; peanut butter balls dipped in chocolate; cherry surprise cookies so rich they were hardily edible; donuts, usually so tough they were hardly edible; fudge, both chocolate and divinity; cherry squares; cherry cake; gumdrop cake; light fruit cake; dark fruit cake; mince pie; apple pie; frozen strawberry dessert: these were the Christmas foods of my childhood, and the holiday lasted until they were gone.

Candied Yams These simple candied sweet potatoes go particularly well with pork or ham, and they're easy to prepare and bake. 

Prep Time: 10 
Cook Time: 1 hour 5 minutes
Total Time: 1 hour 15 minutes

6 large sweet potatoes, about 4 pounds
1/4 cup butter, melted
1/2 cup sugar
1/4 cup brown sugar, firmly packed



Instructions:
Cook sweet potatoes in boiling water for 35 to 45 minutes, or until tender. Let cool until they can be handled, then peel and cut into 1/2-inch slices. Layer slices in a lightly greased 12x8x2-inch baking dish. Combine butter and sugars; spoon over sweet potatoes. Cover tightly and bake for 30 minutes, or until thoroughly heated.

When it comes to vegan cooking and baking, cheese substitution is one of those things that gives me a headache. I’m a bit wary of soy-based alternatives, as they seem over-processed and unnatural in comparison. There are, of course, equally over-processed varieties of “cheese” that freak me out too! (Full disclosure: I did have a bizarre addiction to Tofutti cream cheese a year or so ago, and have been rather reluctant to group it into the Weird Fake Cheese category. But the editor in me demands consistency above all else!) Another interesting alternative that I’ve come across online is blending together nuts, nutritional yeast, and other stuff to make a creamy, cheese-like substitute. This usually involves soaking the nuts overnight, which is far more than I care to go through to make fake cheese. (Also, the vegan community seems to invariably refer to this substance as “nut cheese”—a phrase that is so hilariously gross, I have trouble taking it seriously

Vegan Sweet Potato, Coconut Milk, & Roasted Chili Ravioli

yield: approximately 2 dozen large ravioli

Dough

2 cups of semolina flour
2 cups of all-purpose flour
a little over 1 cup of water
a dash of salt
Filling

3 small to medium sweet potatoes
around 6 oz. of coconut milk
2 chili peppers (I used red serranos)


Preheat the oven to 450°. Rub the peppers with a little bit of olive oil, then place the potatoes and peppers together in the oven. Roast for about 15 minutes, or until the pepper skin begins to blister and blacken. Remove the peppers and place them in a paper bag (an air-tight container also works if you don’t happen to have a paper bag). Close and let peppers rest for at least 10 minutes (they will steam in the bag, making the skins easier to remove). Peel the skin away from the pepper, then remove the seeds from the inside. Mince the pepper and set aside.

While you’re waiting for the potatoes to finish roasting, combine the flours and salt in a large bowl and make a well in the center. Pour water in the well and stir to combine. Turn out on a floured surface and knead until a smooth dough forms. Divide into two, then cover in plastic wrap or a damp tea towel and let rest.

When the sweet potatoes are soft, remove them from the oven. Once they’ve cooled, remove them from their skins and mash in a large bowl. Add the minced pepper and the coconut milk, and stir until well combined.

Roll one round of pasta dough into a rectangular shape on a well-floured surface, until thin but not in danger of tearing (about 1/16 of an inch thick). Place evenly-spaced spoonfuls of filling along the surface of the dough. Roll the second half of the dough out, replicating the size and shape of the first. Brush a little bit of water in between the spoonfuls of filling, then place the second rectangle on top and press to seal.

Cut out ravioli with a sharp knife or a pasta wheel. To make extra-sure they are sealed, press all around the edges with a fork. Freeze any ravioli that you won’t eat immediately.

Bring a pot of water to a boil, then add the ravioli. Cook until they begin to float (this should only take a few minutes). If you like your ravioli a little crispy (I know I do!), heat a little olive oil in a pan, then add the cooked ravioli and pan-fry over medium heat for a few minutes on each side, or until lightly browned. Top with a little bit of fresh rosemary and sage if you happen to have it, then serve!

Cheesecake is one of the most popular desserts in Poland. A sweet curd cheese is its main ingredient. There are many kinds of sernik, different in composition, taste and way of preparation. The best known is a cheesecake baked in the oven and made on a layer of a crumbly cake, although there are also cheesecakes prepared without baking. In most cases raisins, fruits, a crumble topping or chocolate sauce are stock additions. Quite an original example of this Polish dessert is a delicious sernik made from a sponge cake and cream cheese, and covered with fruit and jelly. This type of cake is dished up cold.

Poppy-seed cake, also known as poppy seed loaf, is a traditional Polish dessert – a yeast cake stuffed with ground poppy. Some raisins, almonds or walnuts are the most typical additions. The baked cake is decorated with icing and (usually) orange peel.

In the distant times this poppy-seed cake was a traditional dessert prepared for Easter and Christmas. In the Christian tradition poppy, containing thousand of seeds in one poppy head, is a symbol of harvest and fertility. Therefore, in the past, the Poles and other Slavs believed that eating poppy-seed cake during the holidays will bring them luck in life.

Gingerbread is a well-known aromatic cake with a very intense and characteristic taste. It is a little hard and has a dark-brown color. This Polish cake is made from wheat and rye flour, milk, eggs, caramelized sugar and honey. Cinnamon, ginger, cloves, cardamom, nutmeg, anise and lavender are usually used for adding flavor. In Poland, piernik is sold in a form of a big lump of a cake, or as a package of small cookies usually covered with chocolate and filled with fruit preserves, nut mass or marzipan.

The gingerbread was a traditional cake of Hanseatic cities. Hence it is known not only in Poland, but also in Germany, Netherlands, Russia, and in Scandinavian countries. Piernik became popular in 18th century in Poland and, just like in other countries, it initially was a symbol of prosperity and a high social status. This luxury character of the dessert was a consequence of very high price of spices. Although gingerbread is normally considered a dessert, crumbled piernik is an ingredient of a traditional Old Polish grey sauce.

Kluski z makiem is a traditional sweet Polish dessert dish. Pasta with poppy-seed is usually eaten during Christmas. This Polish food consists of kluski (kind of home-made pasta) and poppy mass prepared from ground poppy with an addition of honey, nuts, almonds and other stuff

Kisiel is a sweet, thick fruit dessert. This Polish dessert is usually served hot. However, it is also possible to eat cold kisiel. Kisiel is made with an addition of potato starch which serves as a thickening agent. Although making this Polish dessert on one's own, with use of potato starch, fruit and fruit juice, does not constitute a problem, buying powdered ready-made kisiel is definitely more popular. In Polish stores this dessert is available in many flavors.

Strawberry Cheesecake 

2 (8 oz.) packages fat free cream cheese, softened
8 packets (2 1/2 teaspoons) Sweet'N Low
2 tablespoons non-fat milk
1/2 teaspoon vanilla extract
3 tablespoons Sweet'N Low Strawberry flavored syrup, divided
1 cup lite whipped topping
1 prepared (6 oz.) reduced fat graham cracker crust
1 cup sliced fresh strawberries

In medium bowl, combine cream cheese, Sweet'N Low, milk and vanilla, beating until smooth. In small bowl, blend 2 Tablespoons Sweet'N Low Strawberry flavored syrup into 1/3 cup cream cheese mixture; set aside. Fold whipped topping into remaining cream cheese mixture and spoon into graham cracker crust. Spoon strawberry cheese mixture over filling and swirl with knife creating a marbled effect. In medium bowl, combine strawberries with remaining 1 Tablespoon Sweet'N Low Strawberry flavored syrup and spoon over cheese mixture. Chill 4 hours before serving.

Coconut Burfi

Ingredients 
Fine Grated Coconut /Coconut Powder -2 Cups
Condensed Milk -1 Can(300 ml)
Cardamom - 5 no's (crushed)
Edible food colour (any colour) - 2 drops(Optional)

Cut into diamond shapes 
Method
1.Heat a non stick pan in medium flame and add the grated coconut
2. Saute until the coconut flavour comes and check it doesn't turn brown(it takes 5 to 10 mins).
3.Now add the condensed milk and cardamom.
4.Saute for 5 mins continuously until everything rolls out to a ball.
5.Add color(optional) and mix it.Usually burfi is in white color.
6.Switch off the stove.
7.Take a plate or any non stick vessel and grease with butter.
8.Pour the Burfi mixture and pat it tightly with hands.
9.Keep it refrigerated for 1/2 hour for firmness.
10.Now cut the Burfi with buttered knife with vertical lines.
11.Turn the plate to 45 degrees and again cut into vertical lines to form diamond shape.
12.Store and serve the burfi dessert.

Gnocchi, Sweet Corn & Arugula in Cream Sauce
Shelf-stable gnocchi is a great go-to ingredient for 30-minute meals. In this easy dinner recipe, it stars with two of summer's best fresh vegetables--sweet corn and arugula--for one bright and colorful dish.
Gnocchi, Sweet Corn & Arugula in Cream Sauce


Ingredients
2 small ears of fresh sweet corn or 2 cups frozen whole kernel corn
1 pound shelf-stable potato gnocchi
3/4 cup half-and-half or light cream
1 3 ounce package cream cheese, cut up
1/2 teaspoon each salt, garlic powder and dried basil or oregano
1/4 teaspoon freshly ground black pepper
3 cups torn fresh arugula
  Crushed red pepper (optional)
Directions
In Dutch oven cook gnocchi according to package directions, adding corn the last 5 minutes of cooking time. Use tongs to transfer ears of corn (if using) to cutting board. Drain gnocchi and corn kernels (if using), reserving 1/2 cup of the pasta water. Do not rinse.
Meanwhile, for cream sauce, in medium saucepan combine half-and-half, cream cheese, salt, garlic powder, dried herb, and pepper. Cook over medium heat for 10 minutes, stirring frequently. Stir in reserved pasta water.
Return cooked pasta to Dutch oven. Cut corn from cob and add to pasta. Pour cream sauce over pasta; heat through, if necessary. Stir in arugula. Serve in bowls. Sprinkle with additional salt, pepper, dried herb, and crushed red pepper.

Change Up:
Replace the corn with 1 cup chopped red sweet pepper and/or add 12 oz cooked shrimp after tossing with gnocchi with the cream sauce.

This is a wonderful recipe I had published in my very first book around 12 years ago.  It’s a quick and simple healthy meal that I love making at home. These fritters marry perfectly with fresh tomato salsa and smashed avocado scented with jalapeño and freshly squeezed limes. The secret to making them so very delicious is to use fresh corn and not the frozen variety.  It’s also important not to rush the process of cooking them.  I like to do a test fritter just to make sure it cooks properly in the pan – I taste and adjust where necessary.  It’s important that the heat is lovely and gentle which makes sure your fritter won’t burn and it cooks gently through the middle.
WHAT’S GREAT ABOUT ITt:
Juicy, colourful corn is a good source of vitamin C, fibre, thiamine (vitamin B1), pantothenic acid (vitamin B5) and folate. Corn contains a variety of free radical fighting carotenoids including lutein and zeaxathin, which help to protect against eye disease and cancer. Capsicums are available in a range of vibrant colours, which all contain the natural painkiller capsaicin, clinically proven to be useful against arthritic pain. Capsicums are an awesome source of beta-carotene, vitamin C, B6, E and potassium. Coconut flour is gluten free and nut free so it’s kind to sensitive digestive systems. Coconut flour also doesn’t give you that high blood sugar / insulin spike that you can often get with refined white flours so it’s perfect for this recipe.
500 g raw sweet corn kernels  – about 3 ears of corn
1 red capsicum, finely chopped
1 bunch coriander, chopped
4 spring onions, finely sliced
Pinch of sea salt and freshly ground pepper
4 organic eggs
2 generous tablespoons coconut flour  (see notes for alternatives)
Combine half of the sweet corn kernels into a food processor or high performance blender like a Vitamix with the eggs, salt and pepper.
Process for 1 minute or until the corn has broken up and forms a batter with the eggs.
Spoon sweetcorn puree into a bowl.
Fold in the rest of the corn kernels, coriander, capsicum, spring onion and coconut flour to form a batter. Adjust to your consistency and taste.
Heat 2 tablespoons olive oil, ghee or coconut oil in a frying pan over a gentle heat.
Drop 2 tablespoons of mixture per fritter into the pan and cook in small batches for 4 minutes each side or until firm and golden.
Don’t rush
Be Gentle and patient for them to cook through properly.
Serve with leafy greens, smashed avocado and tomato salsa.
Makes 8 fritters.

Serve with a splash of home-made Sweet Chilli Sauce.
Perfect to throw into lunch boxes and served along side a crisp coleslaw made with pineapple, cashew nuts and coconut lime dressing.
NOTES:
Brown rice flour, millet flour, almond flour or my natural pea protein can be used in place of coconut flour and it also pumps up the protein which I love. Use 2 – 4 tablespoons and adjust consistency where necessary.

Ingredients: 
1 cup Crushed corn kernels
8 slices of Sandwich bread
1/2 cup Milk
Salt, sugar and black pepper powder as per your taste and requirement
2 Green chillies
1 tsp crushed Garlic and ginger
1 tsp grated Coconut (optional)
1 tbsp Coriander leaves
Oil for frying

Method: 
1. Mix the crushed corn kernels with grated coconut, coriander, crushed garlic and ginger, finely chopped green chillies, adjust the seasoning, keep aside.
2. Take 2 slices of bread and cut into 4 equal squares.
3. Dip the bread squares in the bowl of milk and gently squeeze out the milk pressing the bread slice between your palms.  
4. Stuff the corn filling on one side and over the other side with another slice of soaked bread and press it tightly sealing all the four sides.  Keep aside. 
5. Prepare the remaining slices and deep fry them on medium heat until they turn golden colour. 
6. Take it out on a tissue paper to remove the excess oil.
7. Serve hot with mint chutney or tamarind chutney or a regular tomato sauce.

Brown Sugar-Glazed Sweet Potatoes with Marshmallows

A Thanksgiving classic with a nineties twist. There are marshmallows and brown sugar to keep the youngsters happy, and "big kids" will like the addition of almonds and spices.
ingredients
4 pounds red-skinned sweet potatoes (yams), peeled, cut into 1-inch pieces
2/3 cup packed golden brown sugar
5 tablespoons butter
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Pinch of ground ginger
2 cups miniature marshmallows
1/2 cup sliced almonds
preparation

Preheat oven to 375°F. Arrange potatoes in 13 x 9 x 2-inch glass baking dish. Combine sugar, butter, cinnamon, salt, nutmeg and ginger in heavy small saucepan over medium heat. Bring to boil, stirring until sugar dissolves. Pour over potatoes; toss to coat. Cover dish tightly with foil.

Bake potatoes 50 minutes. Uncover; bake until potatoes are tender and syrup thickens slightly, basting occasionally, about 20 minutes. Increase oven temperature to 500°F. Top potatoes with marshmallows and nuts. Return to oven; bake until marshmallows begin to melt and nuts begin to brown, about 3 minutes.

Sweet Potato Casserole

4 ½ pounds of sweet potatoes
1 cup of sugar
¼ cup of milk
½ cup of softened butter
2 eggs, large
1 teaspoon of vanilla extract

1 ¼ cups of crushed cornflakes cereal
¼ cup of chopped pecans
1 tablespoon of brown sugar
1 tablespoon of melted butter
1 ½ cups of miniature marshmallows
Directions:

Preheat your oven to 400ºF. Prick the sweet potatoes with a fork and bake them for around one hour. Next, remove the skin, and mash the sweet potatoes. Use an electric mixer to mix the mashed sweet potatoes, sugar, milk, softened butter, eggs, vanilla extract, and salt until smooth. Put the mixture into a greased, 11x7 baking dish. Combine the cornflakes, pecans, and brown sugar in a bowl, and sprinkle it over the casserole, in rows, to create a pattern of diagonal lines.

Reduce the heat to 350ºF, and bake the casserole for 30 minutes. Once complete, remove the casserole from the oven. Place the miniature marshmallows in the rows that do not have the cornflake mixture and place the casserole back in the oven for 10 minutes.

Stuffed Sweet Potatoes

Ingredients:

4 sweet potatoes
¾ cups of chopped pecans
¼ cup of butter
1 large chopped apple
¼ cup of golden raisins
½ cup of packed brown sugar
½ teaspoon of ground cinnamon

Directions:

Place aluminum foil over a baking sheet and put the potatoes on top. Bake the potatoes at 425ºF for 1 hour and 15 minutes. Use a skillet to heat the nuts over medium-low heat. Stir the nuts and cook them for five to seven minutes. Once complete, take them out of the skillet. Put butter in the skillet. Once melted, add the chopped apple and raisins. Spoon the sweet potato/apple mixture into the potato skin shells, and place them on a baking sheet. Bake the stuffed potatoes at 350ºF for 20 minutes. Sprinkle nuts over the top, if desired.

Sweet Potato and Carrot Mousse

4 sweet potatoes (large)
1 lb of carrots
2 ½ cups of water
1 tablespoon of sugar
12 tablespoons of butter (sweet and softened)
½ cup of crème fraiche (1 part sour cream to 1 part heavy cream)

Dash of salt and pepper
Sprinkle of parsley
Directions:

Preheat your oven to 375ºF. Clean the potatoes well with a scrubber. Use a knife to cut a slit in the top of each potato. Place the potatoes on a baking sheet and put them in the oven, on the center rack, to bake for one hour.

Peel the carrots, and cut them so they are in one inch pieaces. Place the carrots in a saucepan. Add the water, sugar, two tablespoons of butter, and a dash of salt and pepper. Over a medium heat, bring the mixture to a boil. Cook the ingredients, uncovered. Watch for the water to evaporate, and observe as the carrots sizzle in butter. Remove them from the stove.

Remove the skin from the sweet potatoes and mix the potatoes together with the carrots, crème fraiche, butter, nutmeg, salt, pepper, and butter in a food processor until you have a smooth mousse.
