Apple and Cream Cheese French Toast with Strawberry Coulis

There was this programme on an Indian TV channel called “Do It Sweet”; it was hosted by a very talented modern chef, the head of the Aurus restaurant in Mumbai and just a very fascinating man Vicky Ratnani. As the name of the show suggests, he was making desserts – beautiful, stunning, yet easy to reproduce at home. Vicky was assisted by fabulous Maria Goretti who, to my mind, with her outstanding appearance resembled Monica Bellucci. Maria used to act more like “a commentator” rather than “a serious helper” in the kitchen (but the Chef didn’t need that much help, anyway) – every time she came up with amazing facts about the ingredients Vicky cooked with. So, the audience learnt about the nutritious value of pistachios, about the benefits of consuming prunes and about the “good fat” and antioxidants in chocolate. And, since Vicky cooked a lot with apples (just think of the fiber content in them!) Maria couldn’t stop praising the fruits. One of the recipes with this wonderful ingredient that got my attention was apple and cream cheese filled French toast. On the one hand, it’s just a stuffed French toast. On the other hand, because of the complexity of flavours in the filling and due to the presentation it is a restaurant type of a dish. I enjoy cooking (and consuming!) it when strawberries are in season: during the winters spent in Kolkata and summer vocations in Moscow. Oh yes, it’s another advantage of having two homes in different parts of the world!



Recipe adapted from “Do It Sweet” TV show (Chef Vicky Ratnani)

Ingredients:

Filling
1 large red apples, peeled
15 gm butter
20 ml lemon juice
20 ml orange juice
50 gm cream cheese
2 tbsp raisins, soaked in Cointreau
1 tbsp orange zest
pinch of cinnamon

French toast
6 slices of bread
2 eggs
100 ml milk
1 tsp cinnamon powder
25 gm butter

Strawberry coulis
200 gm strawberries, hulled
2 tbsp icing sugar

Method:

For the filling, chop the apple and sauté it in butter, lemon and orange juices till soft. Strain the liquid. Add cream cheese, raisins, cinnamon and orange zest to the apples.
For the French toast, cut the rounds out of the bread. Divide the filling between the 3 rounds and top it with the remaining ones. Whisk eggs with milk and cinnamon, pour the mixture into a deep plate and leave the stuffed rounds of bread in it for 10 minutes, turning once, or until the mixture is absorbed. Heat butter in a pan and fry the toasts till golden brown on both sides.
For strawberry coulis, reserve a few strawberries and puree the rest of them in a blender with the icing sugar. Strain through a fine sieve.
To serve, make a pool of strawberry coulis on a plate. Put the French toast on top of it, garnish with the reserved strawberries and mint leaves.

Note:
1.      Strawberry coulis can be made in advance – it keeps well in an airtight container for a few days in the fridge.
2.      It’s better to make the filling long before stuffing the toast – cream cheese melts when it hits the hot apples and the whole mixture becomes a bit gooey. After being left in the fridge for a while, it thickens and it’s easier to spread it on the slices of bread.

With Navratri almost nearing an end, and Diwali just around the corner, it would be a good time to indulge your foodie side to the hilt. This time, ditch your favourite sweet shop and try your hand in making these traditional treats. Hyderabadi food blogger Hari Chandana shares her recipes for peppered pulihora, fried semolina cakes, deep fried sweet dumplings and pumkin halwa.

Miriyam Pulihora

Ingredients:

1 cup raw rice

2 cups water

Big lemon sized ball of tamarind

2 - 3 green chillies

4 dried red chillies

1 tsp black peppercorns

1 tsp mustard seeds

1 tbsp chana dal

1 tbsp urad dal

3 tbsp peanuts

1 tsp jaggery, powdered

1/2 tsp turmeric powder

A pinch of hing

2 sprigs of curry leaves

3 tbsp oil

Salt to taste

Method:

Wash and pressure-cook the rice with two cups of water for 3-4 whistles. Soak the tamarind in water for 10 minutes. Squeeze the extract out of it and set aside. Dry roast the black pepper for a couple of minutes and cool. Grind into a powder and set aside. Spread the cooked rice on a wide plate and let it cool completely. Now, heat oil in a pan and add the mustard seeds, chana dal, urad dal and peanuts, letting them splutter. Fry them until golden brown and add the slit green chillies, red chillies, hing and curry leaves to it and fry for a couple of seconds. Now add the tamarind extract, jaggery, turmeric powder and powdered black pepper to it and mix well. Cook the mixture until the oil separates. Turn off the flame. Mix rice, salt and cooked tamarind and serve.

Pesara Poornam Boorelu 

Ingredients:

1/2 cup urad dal

1 cup rice

3/4 cup moong dal:

3/4 cup freshly grated coconut

1 and 1/2 cups powdered jaggery

1/2 tsp cardamom powder

1/2 tsp salt

Oil for deep frying

Method:

Wash and soak the urad dal and rice overnight or for 6 hours. Wash and soak the moong dal in water for 2-3 hours. Drain the water from urad dal and grind to a smooth paste adding little water (approx. 3/4 cup of water). The thickness should be similar to a dosa batter. Add salt to the urad dal batter and set aside. Now drain the water from moong dal and grind into a smooth paste adding very little water. Pour the moong dal batter into greased idli plates and steam cook for 12-15 minutes. Switch off the heat and allow it to cool.

Chop and grind the pieces and set aside. In a heavy bottomed vessel, mix the powdered jaggery and water. The amount of water should be just enough to soak the jaggery and allow the jaggery to melt. When boiling bubbles appear, add the moong dal mixture and grated coconut and mix well. Cook on a medium flame till it forms a thick mixture. When it thickens, add the cardamom powder and mix well. Allow it to cool and roll into a round shape balls. Heat enough oil in a frying pan. Then dip each moong dal ball in the urad dal batter and let it coat evenly. Then gently drop them into the hot oil. Deep fry them till golden brown and serve hot.

Gummadikaya Halwa (Pumpkin Halwa)

Ingredients :

2 cups grated pumpkin

2 cups milk

1 cup sugar

3 tbsp melted ghee

10-15 almonds

1/2 tsp cardamom powder

Method:

Heat the ghee in a wide and heavy bottomed pan. Add and fry the chopped almonds until light golden and set aside. In the same pan, add the grated pumpkin and fry well, till the raw smell disappears. Add milk and stir it well. Cook the mixture till the milk evaporates and then add sugar. Allow the sugar to melt and cook the mixture till the ghee separates from the halwa. When the halwa leaves the side of the pan, turn off the flame. Add the cardamom powder and roasted almonds before serving.

Cream Drop Biscuits

If you're in the mood for a real breakfast treat, hot cream biscuits slathered with butter and jam can be just the thing. Try them with the quick strawberry jam.

ingredients
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon sugar
2 cups chilled heavy cream
preparation

Preheat oven to 400°F.

Stir together flour, baking powder, salt, and sugar in a large bowl. Add cream, then stir just until a dough forms.

Drop heaping 1/4 cups of batter about 1 inch apart on an ungreased large baking sheet. Bake in middle of oven until tops are pale golden and bottoms are golden brown, 18 to 20 minutes.

Cheddar-Chive Biscuits

Ingredients

4 cup(s) self-rising flour
1/4 cup(s) fresh chives, snipped
2 tablespoon(s) sugar
1 teaspoon(s) freshly ground coarse black pepper
3/4 cup(s) solid vegetable shortening, chilled and cut in small chunks
1 cup(s) shredded cheddar cheese
1 1/2 cup(s) (up to 1 3/4 cups, as needed) buttermilk
1/4 cup(s) unsalted butter (optional), melted
Directions

Preheat oven to 400 degrees F. In a large bowl, stir flour, chives, sugar, and pepper until blended; using a pastry blender, cut in shortening and cheese, until mixture resembles coarse crumbs.
Drizzle 1 1/2 cups buttermilk over the flour mixture, stirring it in with a large fork until a moist dough forms, adding the remaining 1/4 cup buttermilk if dough seems dry (it should be slightly sticky). Turn dough out onto a floured surface. With floured hands, gently knead 3 or 4 times until dough comes together.
Dust surface with a little more flour, then roll dough 3/4-inch thick. Using a 2 1/2-inch biscuit or cookie cutter, cut out rounds. Transfer dough rounds to a baking sheet, 1 inch apart. Gather dough scraps and repeat rolling and cutting, for a total of 24 biscuits.
Make a slight dimple in the center of each biscuit to help the top rise evenly. Bake 18 to 20 minutes, or until golden brown. Remove from oven and brush tops with melted butter, if using. Serve warm.

Sweet Potato Biscuits & Maple Butter

As a Southerner, I've eaten a lot of biscuits in my life. Whether homemade or frozen or from-the-can, I don't usually discriminate. Unfortunately the ones I make from scratch never seem to live up to my expectations of the perfect biscuit. But what is the perfect biscuit you ask?

The Cracker Barrel biscuit of course! Yes, I admit that my perfect biscuit comes from a restaurant chain that dots the highways throughout the southern states. The same chain that still sells RC Cola's and Moonpies and lets you play checkers by the fireplace while waiting for your table. Their rocking chairs are pretty swell, too. 'Cause you know we southerners love a little front porch sitting.

But back to the biscuits. They are always perfectly light and fluffy, almost cloud-like in consistency and never dense. Slathered with butter and strawberry jam? It's like they were sent straight from the heavens. I've ruined many a dinner by eating too many of the tempting morsels before my food arrives.

So you can imagine that all my from-scratch biscuits just never really compare. I mean, how can I compete with a little old grandmother who cranks out fresh biscuits all day (at least that's what I imagine. Someone's granny must sit back there and makes those biscuits, keeping years of biscuit-making secrets close to her chest.)

All that has changed, however. Enter the incredible sweet potato biscuit. Sweet potatoes are hands down my favorite vegetable, whether roasted and drizzled with brown sugar or whipped into a casserole and topped with marshmallows. Remind me to thank the thrifty housewife who thought to add them to biscuits.

These will be my go-to biscuits from here on out. They are melt-in-your-mouth tender, and let's not forget their gorgeous orange hue. Almost like little Easter eggs! To top it all off, I slathered them in creamy maple butter to bring out their natural sweetness. Move over, Cracker Barrel. There's a new biscuit in town... 


Sweet Potato Biscuits with Maple Butter
yields approximately 18 (2-inch) biscuits
For the biscuits
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon kosher salt
6 tablespoons chilled butter, cut into cubes
1 cup cooked and mashed sweet potato (approximately 1 large potato)
1/2 cup buttermilk, plus additional as needed

For the maple butter
1 stick unsalted butter, at room temperature
3 tablespoons real maple syrup

Preheat oven to 375°

In a large bowl, mix together all-purpose flour, baking powder, and salt. Using a pastry blender (or your fingers if you don't have one) cut the butter into the flour mixture until the butter is a mix of pea-size balls and small crumbs.

In a separate bowl, mix together the mashed sweet potato and buttermilk until well-combined. Fold into the flour mixture, adding more (up to 4 tablespoons) buttermilk if necessary. The dough should form a nice ball, and be just a bit on the sticky side, as opposed to crumbly and dry. Chill the dough for thirty minutes, if desired, although you can bake them off immediately if you would like. I happen to like the way the biscuits look when the dough has chilled (a bit more crackly on top), but the flavor is not affected by this step.

Pat out the dough onto a lightly floured surface to about a 1-inch thickness (do not roll out the dough with a rolling pin). Cut out rounds using a well floured biscuit cutter. Gather the remaining scraps and repeat until all the dough is used. Place the biscuits on a large sheet pan and bake for 15 minutes (or bake in batches).

For the maple butter, mix the room temperature butter and maple syrup until completely combined and smooth. Serve with warm biscuits or refrigerate until needed.

Note: the cooked biscuits will freeze beautifully and can be pulled out at a moments notice. Just bake at 375° until heated through.

INGREDIENTS :

Anday 8 adad 
Maida ¾ cup 
Cheeni ½ cup 
Coco powder ¼ cup 

Cake icing k liye 
Fresh Cream 250 gram 
Coco ¼ cup 
Icing Sugar ¼ cup
METHOD :


Anndo ko itna phaint lain k who phool jaain. Ab pisi hoi cheeni daalain. Mix karain. Ab maida aur cooc powder ko ek sath mix karian aur ando main daal kar fold kar lain. butter na ho to 200 C grade per bake karain 15 minute tak. 

Cream ko achi tarha beet kar lain. Icing sugar ko daal kar mix karain. Cake ko 2 hisso per cut kar k cheeni ka syrup daalain, cream lagain. 
Phir dosra part rakh kar poray cake per cream laga kar 15 minute fridge main rakh dain. 
Cooking chocolate ko melt karain. Ab is main ½ cup cream, 1 khanay ka chamcha makhan daal kar mix kar k cake per drop karain. Poray cake per cover lagaiye.

Stove Or No-Oven Bake Chocolate Cake Recipe
 
Ingredients :

• Take a pan with lid (degchi) 
• Small Round stones (bajri) to completely cover the base of the pan 
CAKE: 
• Eggs 6 
• Sugar 7 tbsp 
• Refined Flour 8 tbsp 
• Coco powder 2 tsp 
• Condensed / Sweet Milk 1 tbsp 
• Water 1 cup 
• PRESENTATION: 
• Butter 1/2 kg 
• Icing Sugar 6 tbsp 
• Coco powder 1 tbsp 
• Cooking Chocolate 1/2 kg 
• Cherries as required 
Stove Or No-Oven Bake Chocolate Cake Method :

1. Put the pan with stones on the stove and properly preheat it to bake the cake. 
2. Try to cover the pan with the glass lid. 
3. Beat eggs with electric beater. 
4. Then add sugar and beat till sugar gets dissolved and mixture takes form of foam. 
5. Add flour and mix well with beater. Slowly add flour to the mixture while constantly stirring/ beating it. 
6. Add coco powder and mix. 
7. It will take almost 7 to 10 minutes to mix all the ingredients well. 
8. Pour the mixture in the mould and place the mould in the pan. 
9. Keep the flame high. 
10. Cover the pan and let the cake sponge rise. 
11. When it starts rising, cover the pan with aluminum foil and then place the lid on it. Foil is placed so keep the sponge safe from water drops appeared in the form of steam. 
12. Now put the flame on medium heat. 
13. After 5 minutes, remove the foil to keep checking the sponge. 
14. To make icing, make the butter bit soft to blend it with other ingredients. 
15. Add icing sugar to butter and mix well with electric beater. 
16. Add coco powder to the icing and mix. Add more coco powder if you want to make the icing dark. 
17. To drizzle and keep sponge soft, take milk and add some water in it. Mix well 
18. When sponge rises completely and is ready, take the mould out of the pan. 
19. Leave to cool and take the sponge out carefully. 
20. Cut the sponge from center into two halves and properly cover one half with the icing. Place the other half on it. 
21. Use long knife to spread the icing neatly and finely. 
22. Add some milk to make icing soft if required. 
23. Now cover the cake with icing and place cherries on the top. 
24. Crush / grate the cooking chocolate and sprinkle in the cake. 
25. Garnish as desired and ready to serve.

While I no longer live in San Francisco, I dream of the dessert pizza at Gialina Pizzeria to this day. It was buttery and flaky and slathered with mascarpone and chocolate. The good news? San Franciscan or not, there are a few great dessert pizza recipes out there just awaiting a hungry audience.

The nice thing about dessert pizzas is you can make them using leftover pizza dough and whatever seasonal fruits you have on hand. If time doesn't allow for homemade pizza dough, many of these recipes suggest store-bought dough or the always delicious cheater's version: puff pastry. If you're a Nutella fan, you can never go wrong with that route, and sweeter cheeses like mascarpone are always a hit. Dessert pizzas are a relatively low-stress dessert, and are wonderful for large crowds and parties. Or just date night at home.

Ever had pizza for dessert? If not, you are in for a treat--literally. While sweet pizza may sound odd, there's really nothing strange about topping a neutral-tasting crust with sweet instead of the usual savory. If you've ever had a Nutella-filled crepe with or without fruit, you should have an idea about how delicious this pizza will taste. Trust me, this pie is sure to please everyone from kids to adults. And feel free to get creative with the toppings--any fruit, nuts, dried coconut, or chocolate chips will be delicious.

Total Time: 30 minutes

Yield: 1 pizza pie

Ingredients:

1 prepared homemade or store-bought pizza dough
2 tbsp. unsalted butter, melted
1/2 c. Nutella or other hazelnut-chocolate (or all chocolate) spread--you can even make it yourself
1 banana, sliced
1 c. strawberries, sliced
powdered sugar for sprinkling, optional
Preparation:

1. Place pizza or baking stone in oven if using. Preheat oven to 500ºF.

2. Bring dough to room temperature (it should roughly double in size) and on a well-floured surface, stretch or roll it out to a flat circle.

3. Place stretched dough onto pizza peel, if using a baking stone, or onto a pizza pan or baking sheet.

4. Brush melted butter on top of dough, leaving about an inch around the edges bare for the crust. Using a fork, poke holes all over the dough to prevent it from bubbling up too much.

5. Transfer dough to oven and bake about 10 minutes, until the crust is golden brown.

6. Remove dough from oven and carefully spread Nutella or other spread on top, again leaving an edge for the crust. Place banana and strawberry slices on top. Feel free to add any other toppings, such as hazelnuts, pecans, dried coconut, chocolate chips, or other fruit.

Goa is a mix of east meets west, this in not only represented in their culture but also in their cooking style. The traditional way of cooking is still very alive today. If you visit any rural area, the locals can be seen cooking in clay pots on firewood. They equally emphasise on serving food that is not only tasteful but fresh. Mango Mousse Cake 

1 Using your hand separate the egg yolks and whites as shown the image below. Using an egg beater, whip the egg whites till they are frosty and there is no liquid left in the bowl.
   
2 In a larger bowl, add the whip cream and using the egg beater whip the cream till soft peaks appear. Add the beaten egg whites and beat the cream till it is thick.


3 Slowly start folding the mango pulp in the cream. Add one tablespoon at a time so that it mixes well. (I don't add sugar since alphonso mangoes are really sweet). Keep beating for about 10 minutes till a thick mix it formed.


4 Add the gelatin or agar powder and mix well.

5 Cut of the edges of the pound cake and cut into small pieces to form the base. pour the mousse into the glass/bowl and let it set for about 2 hours. For garnish, I used mango chunks, grated white chocolate and mint.

Guavacheese is also known as Perad and Goia-bada in Portuguese.  One of the most famous sweet from Goa. I love guavacheese but loved the home version. As you could make how much you want. The guavas and lime flavor compliments each other it’s like match made in heaven. This dessert tastes sweet and sour both ;)

What’s Guavacheese? It’s a dessert made from Guavas, Sugar and lime juice. In some countries it’s also referred to as Romeo Juliet. Guavacheese is used as a spread on toast and some served with pastries. It’s a simple recipe made with basic ingredients found in kitchen.

For this recipe you will have to select the soft Guavas not the one with hard skin. Further you will have to blanch them in hot water Or boil them until it gets tender. Later remove their seeds with the help of a spoon Or finger. The secret to this recipe is there should not be a single guava seed else it will come in your mouth while eating.
