Roshogolla / Rasagola / Rasgulla Recipe  

Ingredients:

Milk: 2 cups
Water: 1 and 3/4 cup 
Sugar : 1 cup
Lemon Juice: 1 and half tbsp
A pinch of cardamom powder or A few drops of rose essence 
  
Method:

1. In a vessel, bring the milk to a boil. Add a tablespoon of lemon juice to it and mix until the milk curdles. 

2. Keep stirring and then add the remaining lemon juice. Keep stirring until the whey completely separates. 

3. Switch off the heat and strain the paneer in a cheese cloth. 

4. Wash the paneer with fresh water to wash away the sourness of the lemon. 

5. Bring the edges of the cloth up and tie it together. Squeeze the excess water and hang the cloth above the sink for 30 minutes. 

6. Knead the paneer to make a smooth pliable. Kneading the paneer is very important. Knead it for 10 minutes. 
  
7. Divide the paneer dough into equal size small portions and shape each portion into a smooth round ball.

8. In a wide vessel, add the sugar and water and allow the sugar to melt. 

9. Now reduce the heat to medium flame and add the rasgullas carefully. 

10. Cover with a lid and cook for 10 -15 minutes. Open the lid occasionally. 

11. Then switch off the flame and let them cool completely. 

12. Refrigerate it and serve chilled.  

Rajbhog is prepared just like spongy rasgullas. The only difference here is that it is stuffed with few dry fruits and is bigger in size. We can make kesari rajbhog by mixing kesar (saffron) into it.

Milk - 1.5 liter (7.5 cup)
Sugar - 1 k.g (4 cup)
Ararot - 2 tsp
Tatri (tartaric acid) - ½ tsp or 3 pieces (equal to the size of chana)
Cashew nuts - 10-12
Pistachios - 1 tbsp
Green cardamom - 6-7
How to make Bengali Rajbhog Rasgulla
For making rajbhog we need to prepare chena first. For this take milk in a utensil and place it on flame for heating.
For coagulating milk, make a tatri mixture by dissolving tatri (tartaric acid) in ½ cup water. When milk starts boiling; turn of the gas. Take it off from flame and allow it to get frigid. Make sure milk is 80% warm. Now add little tatri acid mixture at a time and keep stirring the milk. When milk coagulates completely stop adding tatri mixture into it. Within 2 minutes milk coagulates.
 Now wash a white muslin thin cloth and spread it over a sieve. Place the sieve over a big utensil. Pour the coagulated milk over the cloth, chena will be collected over the top and water will drain out in the utensil kept beneath. Lift up the cloth from all sides, hold and squeeze out rest of the water. Chena is now ready.
Take out chena in a big plate and knead with your fingers until smooth. Add ararot in chena and mix well. Chena for making rajbhog is ready. 

How to make stuffing:
Cut cashews and pistachios into small pieces (you can also soak pistachios in lukewarm water and remove its skin). Peel and crush cardamom for making powder. Mix 1 tbsp chena and all chopped dry fruits for making stuffing (you can add yellow or red food color in stuffing as per your taste). Prepare rajbhog balls now.
Divide chena into small equal parts (divide this much quantity into 12-14 parts). Take one chena part and flatten in with your hands. Make a well and place ¼ tsp stuffing in it. Lift up the chena from all sides and close the stuffing nicely. Roll it back into a round ball and place it on a plate. Like wise prepare all rajbhog balls.
How to make sugar syrup:
Take sugar in any big utensil and add 2.5 cup of water. Cook until sugar melts completely. If the sugar consists of some dust particles then add ½ cup milk into it. There will be a formation of froth on the surface. Remove this with help of a spoon. Syrup doesn’t needs to be of one or two thread consistency. When syrup starts boiling, place rajbhog into it one by one. Keep the flame high, as there should be constant boil in the syrup.
Cover and cook rajbhog so that there is constant formation of froth, as these will help in cooking rajbhog nicely. Within 8-10 minutes syrup will start getting thick in consistency. Now add 1-1 tsp water at a time in syrup making sure there is constant boil in the syrup. Cook rajbhog in boiling syrup for 20 minutes.
When rajbhog will get frigid add 1-2 pinch of food color or 1 tbsp saffron water in the syrup and mix well. Yellow-golden rajbhog are ready. Keep the rajbhog as it is sugar syrup and enjoy eating for 1 week.

Coconut Popcorn Crunch Pie

Recipe Ingredients:

2 quarts popped popcorn, unsalted 
1 can (4 ozs.) flaked coconut, toasted 
1 cup sugar 
1 cup light corn syrup 
1/2 cup butter or margarine 
1/4 cup water 
2 teaspoons salt 
1 quart vanilla, spumoni, or butter pecan ice cream 
1 teaspoon vanilla - fresh or defrosted 
Frozen fruit or chocolate sauce, if desired 

Cooking Instructions:

Mix popcorn and coconut in a large buttered bowl. Combine sugar, syrup, butter/margarine, water, and salt in saucepan. Bring to a boil over low heat, stirring until sugar dissolves. Continue cooking until syrup reaches the hard crack stage (290-295 degrees Fahrenheit).

Stir in vanilla. Pour syrup in fine stream over popcorn mixture; stir until particles are evenly coated with syrup. 

Turn half of popcorn mixture onto buttered 12-inch pizza pan; spread in thin layer covering bottom of pan. Mark off into wedge-shaped servings. Repeat using remaining popcorn mixture; cool. 

Cover one layer with ice cream; top with second popcorn layer. Store in freezer. To serve, cut in wedges. Serve plain or with desired fruit or sauce.

Stovetop Popcorn

New projects, recipes included, always begin with a lot of excitement and high hopes. And sometimes complications arise. So when the blog post I was preparing for this week fell through, I turned to my old stand by: popcorn.
It’s one of my favorite foods. I have been known to eat it for dinner. And I am pretty damn picky about it, too. No microwave popcorn is allowed in my house. I make my popcorn on the stove top.
Are you loyal to microwave popcorn? A few things to consider:
Two words: Popcorn Lung

Taste!
Try the stove top method and you’ll forget why you even own a microwave.
Salty
This is less of a recipe and more of a method. You can adapt it to your taste and your serving needs. Start with a heavy bottomed pot. If you’re popping for a crowd, a Dutch oven will work. For two to four people, use a two quart sauce pan. For one or two people a one quart sauce pan is just enough. Of course, these are just guidelines. The important thing is that the depth of the pan is close or equal to the height of the pan. A skillet or sauté pan is going to be too shallow.
Put your chosen pot on the burner and turn the heat to medium. (Stoves may vary, but I’ve always had luck with medium heat.) Now pour just enough popcorn kernels to make a single layer on the bottom of the pot.
A word about kinds of popcorn: You can find it at any grocery store. You don’t have to buy fancy stuff to get good popcorn. But the best popcorn I’ve ever had is by White Cat Corn. Yes, it costs eight dollars, but the flavor is so superior to most other corns, you’ll notice it right away. The kernels pop into beautifully filled-out pieces, and have a true, righteous corn flavor. Not to mention it comes in a sweet jar you can re-use later. (I haven’t told you about my glass-saving compulsion yet—another day.)



Once the kernels are in the pot, pour in just enough oil to cover them. I use canola oil. Olive oil has many fans, though it’s not my favorite on popcorn. To each his own. I’ve also tried coconut oil which lends a subtle coconut flavor and gives this New World staple an exotic essence.


Now, put a lid on that pot. Some people recommend leaving the lid ajar, but I’ve never needed to. In a couple minutes you’ll hear the first tentative “pop.” This is a good time to have glass lids so you can watch the action unfold.
The pot will fill with popcorn and the popping will reach a crescendo and begin to slow. When the popping has slowed to about one pop every two seconds, take the pot off the heat. Wait a second while the popping comes to a stop. Then dump the contents into your favorite popcorn bowl.
If you like buttered popcorn (and who doesn’t?) drop a pat of butter into the pot while it’s still hot. Melt the butter using the remaining heat, and feel proud that you didn’t dirty another bowl to melt the butter. Drizzle the melted butter over the popcorn and toss to distribute.
I like to salt after adding the melted butter. If you’re limiting your saturated fats, you could drizzle some extra virgin olive oil over the top, or skip it altogether since some of the oil from the pan will cling to the popcorn. Personally, I’ve found that adding more helps the salt stick. I use a fine grain sea salt. Large crystals like Maldon salt are delicious but don’t adhere as well. Some people add their salt to the oil and unpopped kernels at the beginning. I’ve found that method leaves the salt in the bottom of the pot and not on the popcorn.


Once you’ve salted to taste and tossed so it’s sufficiently distributed, your popcorn is ready to eat! Get to it, while it’s still hot.
Sweet
Kettle corn is the perfect storm of flavors that hits all your brain’s pleasure centers at once. Good kettle corn is a transcendent culinary experience. Making it yourself can be tricky, however, since the sugar has a tendency to burn. Here’s what I do:
Add three tablespoons of granulated sugar (if you’re using a two quart pot) to the oil and popcorn kernels in the pot. You can adjust the amount of sugar to your taste. I dust the sugar over the oil and kernels so it soaks in evenly, then I shake the pan just a bit to spread it out.* Now cook the popcorn as described above, but give the pot a little shake now and then to prevent burning.
*Alice at Savory Sweet Life recommends heating the oil first, then adding the kernels and sugar. I will try this next time and see if it improves my results.
After taking the pot off the heat and pouring the contents into your serving bowl, salt to taste. You won’t need to add additional oil or butter because the warm sugar will grab the salt and not let go. The popcorn will be slightly sweet, with a thin crystallized layer of sugar over the kernels. You can’t beat it.

Navratri Special ~ Sweet Pongali
The festive season has begun in India. Navratri is here and its time for some special festival sweets. The first day of Navaratri has Sweet Pongal as an offering to Goddess Durga. Creamy, infused with cardamom, garnished with roasted raisins and cashew nuts, this delicious jaggery based pudding is comforts and warms the soul.

Sticky rice is normally steamed, and because of this, few people here in the West can be bothered making it. But did you know you can also make sticky rice in your rice cooker with delicious results? Cooking sticky rice in your rice cooker cuts down on all the steps involved, and is so quick and easy to do, you'll find yourself enjoying sticky rice more often. As you know, sticky rice is excellent served with stir-fries, curries, or any dishes with a delicious sauce (the sticky rice both absorbs and complements it).

Ingredients:

SERVES 4
2 cups Thai sweet rice (also called "sticky" or "glutinous" rice)
2+ 1/2 cups water
1/2 tsp. salt

This rice pudding recipe is scrumptious, plus healthy and nourishing. It starts with Thai sweet rice which is flavored with coconut milk, brown sugar, plus warm spices like cinnamon, cloves, nutmeg, and star anise. An optional step includes adding red adzuki beans or red bean paste (this gives the pudding extra texture, vitamins, natural color, and flavor). Top with your choice of cream, milk (or condensed milk), soy or rice milk, or more coconut milk/cream. Mmmmm....

Ingredients:

2 cups Thai sweet rice (also called "sticky" or "glutinous" rice)
3 1/2 cups water
3/4 to 1 cup palm sugar, brown sugar, or white sugar (to taste)
1 can coconut milk
1 tsp. vanilla
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground cloves
1/2 tsp. salt
optional: whole star anise as garnish
optional: crushed peanuts or toasted coconut

Black sticky rice (or black glutinous rice) is a naturally sweet, dark rice (dark purple more than black) that has both fiber and loads of antioxidants - which only makes this baked rice pudding extra enjoyable to eat. You can cook black sticky rice on your stovetop or in your slow cooker or rice cooker. You'll be amazed at the unique taste of the rice in combination with the coconut milk. Add a dab of coconut cream on top (instead of whipped cream), and you have a healthy dessert that's very delicious and guilt-free!

1 cup black glutinous rice
1/4 cup brown sugar (or substitute maple syrup)
1/4 tsp salt
1 1/2 cans coconut milk
1 1/2 cups water
3 eggs
a little coconut cream (to serve)

This steamed rice cake is delicious and healthy - light in sugar, high in protein, and low in saturated fat. Like most Thai desserts, this cake calls for sticky rice (also called "sweet rice") and heart-healthy coconut milk. "Panadan" is a green paste made from pandan leaves (a herb) - which makes it a nice dessert for Christmas or St. Patrick's Day. This cake is delicious on its own, either served warm or at room temperature. Or dress it up with fresh fruit and a little toasted coconut (as shown). ENJOY!

2 Tbsp. white or brown sugar (or maple syrup works well too)
pinch of salt
2nd LAYER:
5 eggs
1 1/4 cups coconut milk (thick, high quality)
1/2 cup white or brown sugar (or maple syrup)
pinch of salt
2-3 drops pandan paste/essence, available in tiny bottes at Asian/Chinese food stores)
2 Tbsp. rice flour (available in small plastic bags at Asian food stores)
