Makes: 3 to 4 servings

Ingredients

1-1/2 litres of milk 

1/2 cup of semiya/ vermicelli

1/2 cup sugar

3 tablespoons of halved cashewnuts

3 tablespoons of raisins

a few strands of saffron

1/4 teaspoon of cardamom powder

1 + 1 teaspoon of ghee

Method

In a teaspoon of ghee in a small pan on low heat; add in the cashewnuts and roast until crisp and golden. Add in the raisins, stir for a few seconds and keep aside.

In a heavy bottmed sauce pan; add a teaspoon of ghee roast the vermicelli on low heat until you get a roasted aroma. Add in the milk, turn the heat to high and bring the mixture to a boil. 

Once the milk is boiling with the semiya, turn the heat to low and simmer until the semiya is cooked. Add in the sugar, cardamom powder and saffron and stir until the sugar dissolves compeltely and simmer for another 5 minutes till the flavors get rich into the payasam and until it looks thick and creamy.

Turn off the heat and finally garnish with the roasted cashewnuts. Serve the payasam hot or cold.

Gajjar Halwa is a classic Indian sweet served all over India and various forms of preparation. A typical method of making this is with koya (condensed milk) and ghee, with lots of dry fruits making this a rich dessert. This recipe calls for reduced fat milk, which feels lighter and delicious to taste. Serve it hot with cold vanilla ice cream or as it is.

Makes: 6-8 small servings

Ingredients

3 cups of grated carrot
3 cups of milk (2% milk)
¾ cup sugar
1 tablespoon cardamom powder
¼ cup sliced almonds (you get ready made sliced almonds) or roasted cashewnuts
1 tablespoon ghee

Method

Heat ghee in a big sauce pan/heavy bottomed pan; add the carrots and sauté for a few minutes.

Add milk, cardamom powder and sugar. The carrots should be completely immersed in milk. If you feel more milk is required go ahead and add a little more. More milk will not harm the halwa.

Keep the heat in medium high and monitor the cooking of halwa. The milk froth will keep forming and as and when it rises, give it a stir.

Cook and stir until the entire milk is evaporated and the carrot milk mixture is thick. Only when the entire milk has become solidified, turn off the heat.

Now add the sliced almonds and stir. Serve hot as it is or with cold vanilla ice cream.

1/4 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1/2 teaspoon vegetable shortening
2 tablespoons NESTLÉ® TOLL HOUSE® Premier White Morsels
8 peppermint sticks or WONKA Pixy Stix Filled Candy Canes, unwrapped
8 cellophane bags and twist ties or ribbons for wrapping
Makes:  8 sticks     Prep Time:  10 minutes    Total Time:  26 minutes
LINE baking sheet with wax paper.

MICROWAVE semi-sweet morsels and vegetable shortening in small, uncovered, microwave-safe bowl on HIGH (100%) power for 20 seconds; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.

Red food coloring

Directions:
PREHEAT oven to 350º F. Grease 24 mini-muffin cups. Place one square of cookie dough into each cup.

BAKE for 15 to 17 minutes or until golden brown. Cool completely in pan(s) on wire rack. With tip of butter knife, remove cookie cups from muffin pan(s).

SPOON half of frosting into plastic bag; seal. Stir food coloring into remaining frosting in container until desired color is reached. Fill other plastic bag with colored frosting; seal. 1 container (16 oz.) prepared vanilla frosting
Green food coloring
14- x 17-inch piece of cardboard for base, covered in foil or parchment paper or large flat platter
NESTLÉ® TOLL HOUSE® Morsels (such as Semi-Sweet Chocolate, Milk Chocolate, Premier White)
Assorted WONKA® Holiday Candies (WONKA® EVERLASTING COBSTOPPER® Snowballs, NERDS® or SPREE®)
Decorator sprinkles, candies and sugars
20-inch strip of strawberry fruit-flavored snack in 3-foot rolls

Directions:
PREPARE cookies following package directions. Cool on baking sheets for 2 minutes. Remove to wire rack to cool completely.

COMBINE frosting and food coloring in small bowl to shade of green desired.

TO MAKE BOW:
CUT four 5-inch strips from fruit snack roll. Peel off paper backing. Cut a small “V” on end of two strips. Form loops with remaining two strips; pinch ends together. Place loops on top of strips. Pinch all together to make bow!

TIPS:
• For easier decorating, 1 cup of icing can be spooned into resealable, heavy-duty plastic bag; seal. Cut small corner of bag. Squeeze bag to use. Fill with additional icing as needed. Store any leftover icing covered in refrigerator for up to 30 days. • Cookies can also be made into a tree, initials or any other shape desired.

Indian sweets or Mithai, are a type of confectionery that rely heavily on sugar, milk, flour and condensed milk, and cooked by frying, however the bases of the sweets vary by region. In the Eastern part of India for example, milk is a staple, and most sweets from this region are based on milk products. While Indians love their vast array of Indian food, their second love without a doubt, is the love for colorful sweets made at home or the complicated ones bought from nearest sweet shop. Here we would show you making of sweets easy with simple to do instructions.As India is rich in its heritage and culture, we have a plenty of festivals in line. Sweets are the most sought of dish offered to the deity. Indian sweets are large in color, shape and size. Their flavors are also distinct.Indian sweets are prepared in 2 varieties – one is the milk based sweets like the Rabri, Peda, Rasbari, Burfi etc and the other is the flour based sweets which includes Ladoos, Malpua, Mohan Thal, Halwa etc.Indian sweets like the Sandesh, Gulab Jamun, Kalakand, Rosgollas, Mysore Pak, Kakinada Kaja, Putarekulu and many others are very popular all over India. It is said that no country has a wider selection of exotic, yummy sweets than in India.

Chocolaty Fulzadi is a delectable sweet that is perfect for the festive occasion, and makes for an entertaining quick bite especially when the whole family gets together.

Made using chocolate and ghee, it can be eaten for dessert, or simply when hunger strikes. Children especially love this sweet for its taste and its unique appearance.

Learn how to make the Chocolaty Fulzadi by following our recipe below;

Ingredients:

1 cup milk powder

2 tablespoon cocoa powder

2 teaspoon chocolate powder

¼ cup sugar

2 teaspoon ghee

4 tablespoons silver bolls

Method:

Begin making this sweet by mixing together milk powder, cocoa powder and chocolate powder in a large bowl and keep it aside.

Next, take the sugar in another bowl and add in 2 tablespoons of water to it, heating it on medium till the sugar dissolves completely and the syrup becomes stringy. Once done, remove the vessel from the heat and add ghee to the syrup, blending it well.

Now pour the sugar syrup into the bowl of dry powders and mix everything together.

Once mixed well, make small lemon sized balls out of the blended mixture, and roll them into a cylinder, sprinkler or fulzadi shaped stick. Place small silver balls all over these rolls.

Finally, take about 10 toothpicks, wrap them with an aluminium foil and pierce each of the cylinder or fulzadi with it.

Your Chocolate Fulzadi’s or Chocolate Sprinklers are now ready for a bite!

Guava Cheese

(Red Goan Perad, Guava Paste, Goiabada, Pasta de guayaba, Guayabate, Perad)

  Perad, also known as Guava Cheese is a very popular dessert from Goa. It is another dish that was brought to Goa by the Portuguese. In America it is known by different names as Guava Paste, Pasta de guayaba or Guayabate. It has athe texture like a fudge and can be used as a spread over toast, had as a dessert or used as a filling to make pies and pastries.

Ingredients
Guavas - 1 kg
Sugar - 750 grams
Lime Juice -  1 tblsp
Butter/Ghee - 1 tblsp

Method
1. Take some fresh guavas, clean it and peel the edges and black spots from it. Chop it into big chunks.
2. Boil the chunks with little water and grind it to a smooth puree. Boiling is optional but it makes the blending easier.
3. Sieve the puree through a strainer or a muslin cloth to get rid of all the seeds. This is a time consuming process but is quite important.
4. Take this smooth puree in a non stick flat pan and heat it. Keep stirring continuously to prevent the bottom from getting burnt.
5. When most of the moisture evaporates, add the sugar and continue stirring.
6. Slowly the colour begins to deepen and the mixture begins to thicken. Add the lime juice and butter (or ghee) and continue mixing. The butter gives a nice sheen and the lime helps the cheese to set.
7. You can remove and store when it the mixture is still viscous (i.e.in Jam consistency). This can be used as a spread over toast for breakfast.
8. If not, continue to cook till the mix comes together as one mass and starts to leave the edges of the pan. 
9. Grease a plate or tray with some oil and spread this mixture evenly. 
10. Let it cool and set for a couple of hours before you slice it and enjoy. You can cut the Guava Cheese into squares or diamonds or any other shape.

Sing Paak or Peanut Burfi is a delectable Gujarati sweet that is quick and easy to put together and has a subtle flavour. ‘Singha’ is the name for peanuts in Gujarat, and the Sing Paak Barfi is a nutritious twist to the normal barfi.

Try out this delectable sweet dish, and learn how to make it from the recipe below;

Ingredients

250 gms peanuts, roasted and crushed fine

150 gms sugar

8-10 saffron/ kesar threads

1 cup water

1 tablespoon ghee

½ cup dry fruits

Method:

Begin by heating the sugar and water in a small pan over medium, till the sugar melts completely and the syrup becomes stringy of two thread consistency. Once done, add the saffron to it and stir. To this mixture add in the crushed peanuts and mix them together until well combined while still on the heat. Once well combined turn off the gas and then stir  in the ghee, followed by the dry fruits.

Once everything has blended together, spread the mixture evenly on a large tray greased with a little ghee. Try to get a tray that has a rim and and just right enough to fit the contents. Allow the burfi to rest in the tray and cool completely. This takes a good 5 to 6 hours to cool and firm. Once firm, cut it into small square or diamond pieces.

Serve this delicious Sing Paak or the Peaut Burfi as an after-dinner dessert or during the festivals like Diwali and Holi

What's life without a little sweetness? Sweets have always been an integral part of Indian cuisine, with milk based sweets being a predominant feature. While they maybe little bit over sweet to western palates, it would be worth remembering that most Indian sweets aids in digestion and is normally consumed after heavy meals. 

A Indian meal remains incomplete without a serve of sweet dish at the end.
Khir

Khir
Ingredients 

Milk 2 liters
Sugar 4 tbsp
Rice 3-4 tbsp
Few raisins
Sliced almonds
Chopped cashew nuts


Method: 

Heat milk in a large pan.
Simmer until it is reduced to 3 quarters its original volume.
Add sugar and continue cooking until milk is reduced to half and thickens.
Add the raisins, almonds and chopped cashew nuts.
Remove from heat. Cool and serve.


Rosogulla
Ingredients

Cottage Cheese 1 kg
Sugar 1 liter
Water 1.5 liter
Ghee 4 tbsp
Semolina 2 tsp
Standard flour 2 tsp
Rose Water few drops
Cardamom powder 1/2 tsp


Method: 

Sugar Syrup
In a pan add the water and the sugar and boil them together for 20 to 30 minutes and let them thicken.


Rosogulla Balls
In a big bowl add the cottage cheese, ghee, semolina, cardamom powder, and standard flour.
Add all the mixteures together until it forms a dough.
Knead the dough evenly until and unless your palms become oily.
Now make small balls of 1 1/2 inch diameter.
Add these balls in the boiling sugar syrup and let them get cooked in the boiling sugar syrup for 25 minutes.
This will make them spongy.
Remove the pan from heat and after 10 minutes add the rose water essence.
Jalebi
Ingredients 

plain flour 200 gms (maida)
gram flour 20 gms (besan)
sugar 200 gms
few drops yellow colour
Milk 2 tbsp
ghee to deep fry
a plastic easy squeeze bottle


Method: 

Sieve 100 gms maida and besan together.
Make a batter using warn water.
Keep aside for 24 hours.
Add remaining maida and food colour and more warm water if required.
The batter should fall easily when poured Keep aside.(Not too thick not too thin)
Make syrup of the sugar by adding water and boiling.
Add the milk and all the scum to form while boiling.
Make one string syrup. Strain.
Fill bottle with batter.
Heat ghee well in a shallow frying pan and form jalebis in the form of concentric circles about 2 inches on the outside.
Fry till crisp, drop into hot syrup.
Drain with a perforated spoon, serve hot.

Tips The nozzle of the easy squeeze bottle should have a hole the thickness of a knitting needle. 

Sheera
Ingredients 

whole milk 1 cup
condensed milk 1/2 cup
ghee(clarified butter) 4 tbsp
sooji (rawa or semolina) 4 tbsp
cardamom powder 1 tsp
raisins 2 tbsp
almonds sliced fine 1 tbsp


Method: 

Melt the ghee in a non stick pan.
Add the rawa and fry until the rawa turns golden brown.
Mix the milk and the condensed milk in a pan and set aside.
Add the rava to the milk mixture and the add the cardmom powder and stir well.
Cook until dry and the ghee separates from the rawa.
Add the raisins and stir well.
Remove from heat and garnish with almonds.

Tips Serve either hot or chilled. 

Gajar Halwa
Ingredients 

carrots 6 (grated finely)
milk 3 cups
sugar 1 cup
mawa 1/2 cup (powdered milk)
khoya 3 tsp (ricotta cheese)
almonds 1/8 cup (chopped)
cardamoms 5 (skinned and crushed fine)
pistachios 2-3 (powdered)
ghee 1/4 cup (clarified butter)
raisins 1 tsp


Method: 

Cook the carrots in the milk in an open pan on a low flame with constant stirring.
When the carrots are done, take them out and drain any excess milk.
Add the milk powder(mava), the ricotta cheese and the sugar to the carrots.
Heat the ghee in a frying pan, add the carrot mixture and keep on high flame until the carrot paste loses the milky texture and becomes golden brown and the sugar is totally dissolved.
Add the raisins, cardamoms, powdered pistas and the almonds.
Heat through and serve either hot or cold with cream on the side.


Sevai Payasam
Ingredients

vermicelli 200 gms
ghee 1/2 cup
milk 1 1/2 liters
sugar 100 gms
cashew nuts 2-3 tsp
raisins 1 tsp
cardamom powder 1/4 spoon


Method: 

Heat the ghee and fry the vermicelli until a golden brown.
Mix in the cashew nuts and the raisins.
Add milk and boil for 5 minutes.
Mix in the sugar and stir till the sugar is dissolved.
Stir in the cardamom powder and serve hot or warm.


Shrikhand
Ingredients

curd 500 gms
sugar 200 gms (powdered)
cardamom powder 1/4 tbsp
saffron 1 Pinch
pistachios 1 tbsp (chooped)


Method: 

Pour fresh curd into a clean muslin cloth and tie inside the fridge for 2-3 hours.
Take out water completely & beat with sugar till mixed.
Add saffron chopped nuts.
Serve cool.

Coconut Gujiya Holi celebrations are incomplete without this traditional sweet. Dumplings made of maida, filled with a delicious filling of khoya, mava, coconut and pistachio. Deep fried and dipped in a sugar syrup. Coconut Gujiya Coconut Gujiya

Ingredients
For the Dough

3 Tbsp Ghee (clarified butter)

1 Cup Flour

Water

Pinch of Salt 

For the Filling

1 Cup Khoya

1 Mava (condensed milk)

1 Cup Sugar

100 gm Pistachio

100 gm Coconut Powder

Oil to fry

sugar syrup(chasni) to dip
Method
For the dough:

Add flour, pour some water, salt and make a dough from it. Divide dough into smaller pieces.


For the filling:

Cook some khoya, add mava, sugar, pistachio, coconut powder in it.

Grease the gujiya mould, roll out gujiya balls into small puris. Then put it on the mould and press firmly.

Place the stuffing in the hallow portion, apply a little water on the edges, close the mould and press firmly. Remove extra dough and open the mould.

Deep fry till its golden brown.
